Breakfast Tacos
I realize it looks like the only things I make is breakfast food, and that could be true at this point.
It's fast, delicious, easy to make, and fills me up. I've been thinking about baking cakes and cookies for a while, but haven't actually gotten around to it yet.
Yesterday I spent almost the whole day on the water. The day started with my usual lap around Lady Bird Lake before SXSW craziness started up, and then I proceeded to celebrate my friend Paisley's birthday with a Lake Austin Boat Bar Crawl where we hit every restaurant on the lake for drinks and food. I was talking with Paisley earlier in the week about when we would get out on the boat for the first time this year, and I was very pleased it was so soon! To me, days on the lake are the best days. Sunny, 88 degrees, and boating in March? I'll take it!
So today has been a little bit slower of a Sunday and I'm hoping to get a lot done around the apartment and for work to start the week off right. I went to the grocery store first thing this morning because all I had was baby carrots, eggs, and half a box of cereal. I like to get there first thing in the morning to beat the crowd, and then I can shop before I'm hungry. I've really been into using instacart for my groceries, but sometimes it's nice to go to the store and see what's new to get out of routine order.
I knew I wanted to get a lot done today so spending a lot of time on breakfast wasn't an option. Here's a simple and easy, 15-minute breakfast recipe sure to keep you full until lunch at least.
Breakfast Tacos
2 Slices Bacon
2 Eggs
2 Tbsp Milk
2 Tortillas (corn for GF)
1/2 Avocado, sliced
Salsa
Salt & Pepper
Heat a skillet on the stove over medium heat. Place bacon in a skillet and cook until crispy, about 10 minutes. Place bacon on a paper towel to collect excess grease. Pour bacon grease out of the pan and place the skillet back on the stove.
In a small bowl, whisk together the eggs and milk until it's frothy and pale yellow in color. Pour into the skillet and constantly run a spatula through the eggs to make them fluffy and scrambled. Once cooked through, about 3 minutes, divide eggs into the tortillas. Add bacon, avocado sliced, salsa, salt & pepper.
