One Bowl Brownie Recipe
Stress level: Brought 3 completely different baked goods into work this week. The upside-down smiley face emoji is my spirit emoji. TGIF.
These brownies are great to make for last-minute events, or after a stressful week to consume with ice cream. I prefer dark dark chocolate so ended up using 86% cacao chips to give it more bite.
One Bowl Brownies
Ingredients
2 Sticks unsalted butter, room temp
2 Tbsp canola oil
1 1/4 cup cane sugar
1 packed cup dark brown sugar
4 large eggs
1 Tbsp vanilla extract
3/4 tsp pink Himalayan salt
1 cup all-purpose flour
1 cup unsweetened cocoa powder
1 1/2 cup dark chocolate chips
Instructions
Preheat oven to 350°F and grease an 8x12-inch baking pan. Line with parchment if desired.
In a large bowl, whisk the butter, oil, and sugars together until thoroughly mixed.
Add the eggs in one at a time, making sure the egg in the bowl is mixed in before adding another.
Stir in vanilla.
Sift in flour, cocoa powder, and salt.
Fold the dry ingredients into the wet ingredients until everything is incorporated.
Stir in 1 cup of chocolate chips.
Pour into a baking dish and top with remaining chocolate chips.
Bake until a tester comes out clean, about 30-35 minutes.
Remove from oven and let completely cool before cutting.
