Peanut Butter Chocolate Chip Cookies

But we're back!
It's been a crazy few months, to say the least. My blog turned 1! Who'd ever thought we'd make it this far? To be honest, I didn't even think I would ever start this blog, but thankful for all the pushed me to do this.
My professional and personal life have been a whirlwind. This weekend, my work is having a luau with a full roasted pig and shaved ice truck. It probably won't be as great as Mitzi & Chris's annual pig roast, but I'll take what I can get at this point. Speaking of Mitzi and Chris, they were nice enough to send me an ANOVA Immersion Circulator, and you can bet the first this I made were two steaks and smoked out my whole apartment by searing them on the stove (worth it)! I can't wait to play around with it more so get ready for some sous-vide cooking.
I booked another trip out to San Francisco at the end of the month that I'm really looking forward too - shoutout to Virgin America for having cheap round trip flights. June is a really packed month. I don't think there's a day where I don't have anything planned - which is fine by me. I feel like the busier I get, the more efficient I become.
A few weekends ago, I went to Marble Falls, Texas with my friends to LBJ Lake and it was incredible. I feel like a good day at the lake is a cure-all for most problems. I tried wakeboarding, and let me tell you, I was terrible. I have always been bad at water sports, and my old age and wisdom over the years of drinking lake water haven't gotten me very far. Needless to say, it was fun and I'm determined to get up on the board this summer. If you ever find yourself in Marble Falls, I recommend going to Chuspy's Burritos and getting the green chile pork taco. Words cannot describe how amazing that taco is.
Ok, so the cookies. Yes. Get ready, these are a real crowd-pleaser. Normally I'm not super impressed with baked goods and I even enjoyed one of these cookies. They're the kind of cookie that brings you to a better time. Perfectly soft, not overly sweet, and will definitely have you grabbing for more.
Ingredients:
2 sticks (16 Tbsp) unsalted butter, room temp
2 eggs, room temp
1 cup creamy peanut butter
2 tsp vanilla extract
1 1/2 cup dark brown sugar, packed
1/2 cup cane sugar
2 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
8-10 oz dark chocolate chips or chunks
Directions:
In the bowl, whip the butter until light and fluffy, about two minutes in a stand mixer or with an electric hand mixer. Next, mix in the peanut butter and vanilla, scraping down the sides as needed. Once that mixture is homogenous, add the sugars and mix until creamy. Add eggs in one at a time, only beating until incorporated. Slowly mix in the flour, baking powder, baking soda, and salt until just combined. The dough should be a little wet or sticky at this point and then fold in your chocolate chunks. Use a cookie scoop or roll into 1-inch balls and place on a cookie sheet lined with parchment paper. Bake at 350-degrees Fahrenheit for 12-14 minutes.
