Roasted Turkey Breast
I mean, do you really need a runway to the turkey recipe? Thanksgiving will look different this year, and maybe since you're not going to be traveling or hosting a big Thanksgiving, you don't need a whole bird. Just do turkey legs, or what I did, a roasted turkey breast that fed me all week and was able to be cooked in my toaster oven!
Split Turkey Breast
Ingredients
1 Split Turkey Breast, around 2.5 lbs, patted dry
3 Tbsp unsalted butter, softened
2 tsp kosher salt
1 tsp ground black pepper
1 tsp dried rosemary
1 tsp dried time
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Tools
Baking Sheet, half sheet or toaster oven size
Oven or Toaster Oven
small bowl
aluminum foil
paper towel
instant read thermometer
Instructions
Preheat the oven to 400 degrees Fahrenheit and line your baking sheet with foil. Place the split turkey breast skin side up on the baking sheet. Rub softened butter all over the turkey breast - on top, underneath the skin, on the underside of the breast where the bones are - everywhere. In a small bowl, mix together the spices and herbs. Evenly sprinkle the spice mix over the butter, gently patting it in. You might not use all of the spice mix and just discard whatever you don't use. Roast in the oven for 60 minutes or until an instant-read thermometer reads 165. Let rest for 10 minutes and then slice and serve.
