White Chocolate Blondies

After barely surviving the holidays and being in the middle of packing for a move, I wasn't sure I was going to get another post up, but I'll leave you with one final baked good before you vow that it's a "new year, new you" and you're only going to eat raw vegetables moving forward.

My coworker has been asking me to make blondies for a long time now, and I'm finally getting around to it. Being that most of my stuff is packed in boxes, this was a perfect baked good to make since it only requires the essential items - bowl, spatula, measuring cups and spoons.

I don't ever remember eating "blondies" as a kid, but instead had chocolate chip cookie bars occasionally served with our elementary school lunch, and that was everyone's favorite day. I don't remember if they were actually good or not, but for how excited we all got they must have been good, right?

For the blondies, I opted to use white chocolate chips instead of traditional chocolate or butterscotch. I ran to Target to get a bag of white chocolate chips and there is already valentine's day candy lining the shelves! VALENTINE'S DAY! Some people haven't even been resolved of their Christmas hangover and v-day is pounding at the door. sigh.

White Chocolate Blondies

Ingredients
1/2 cup (1 stick) unsalted butter, softened
1/2 cup white cane sugar
1/2 cup brown sugar
1 teaspoon baking powder
1 egg
1 teaspoon vanilla bean paste
1 cup flour
1/2 cup white chocolate chips (or whatever flavor you want)

Instructions
Preheat oven to 350-degrees Fahrenheit.
In a large bowl, mix together the butter and the sugars. Then add in the baking powder, egg, and vanilla bean paste. Once fully mixed, add in the flour. Once you have a dough made, fold in your chocolate chips.
Scoop dough into a prepared 9x9 baking dish and bake for 30 minutes, or until edges are a nice warm brown. Let cool, cut, and serve.
